Or, are you interested in opening up a cutting-edge modern art diner with bold, futuristic forms, geometrically patterned tile floors, and bright lighting that provides a glimpse of things to come? Location, Location, Location - Yes, it's so important that everyone has to say it at least three times! Your ultra-modern art fusion cafe probably isn't going to do well on a small town street with a hardware store on one side and a gift card shop on the other! Nor do you want to open your nostalgic ice cream and sandwich parlour in the heart of a high fashion, trendy gallery district! Try to find a space in a place that will draw in the kind of customers who are going to be excited about what you are doing, you can't please everybody, but a super-posh, elegant, and expensive formal dress is required kind of venue is just going to collect dust in a college town's rowdy pub row!
The Food And Drink - Ideally you will have something special to offer on both fronts! This is your chance to make that secret recipe of yours famous, or try out that fabulous new cocktail you invented! It's important to always offer something new, but you also need to have some standard fair on hand to please the everyday folks who just want their usual. Your food also needs to fit your cafe's decor! Here is an example of a place that got that all wrong- our associate told us the story of pulling his boat into a seaside village and stopping in at a rustic-looking pub on the quay for lunch. The pint of beer was perfect, but when it was time to order some fish and chips to go with it, he couldn't find them on the menu! No fish and chips, or for that matter cheeseburgers or lamb pies, there was nothing that resembled pub grub, it was all fancy gallery walk cuisine with strange French names! He paid for his beer and left!
